What to Eat Wednesday: (When You’re Vegan and on a Budget): Mexican Fiesta!

My Name is Franny and I’m 25 years old! I live in Indiana and I am the Tour Coordinator for a Non-Profit Charity called Feed Our Children NOW! (www.Feedourchildrennow.org).  I enjoy the simple things in life such as family time, reading, drawing, self expression, feminism and toy collecting. I collect everything from Star Wars action figures to the grotesque but loveable Living Dead Dolls and everything in between.  To my friends I’m just Franny but to most people I’m that weird guy because I’m vegan. Being vegan doesn’t mean you have to eat like a rabbit. I eat everything from Hamburgers to Cheese Enchiladas! I’m Mexican; you can’t expect me to stop eating enchiladas just because I’m vegan! For those of you who don’t know what vegan means:

veg·an/ˈvēgən/

Noun: A person who does not eat or use animal products.

 Eating vegan means eating healthier without all the calories and fat. It’s also a way to reduce high cholesterol, avoid diabetes and decrease your chances of heart disease and cancer!  Which is why I’m here to teach you a fun and easy way to cook vegan while on a budget with todays fabulous segment of What To Eat Wednesday (When You’re Vegan and on a Budget): Mexican Fiesta Edition!

A Vegan “Cheese” Quesadilla stuffed with Chick-n and Potatoes smothered in a Red Homemade Sauce and served with a side of Beans.

We’ll start with the beans. Beans are so easy to cook and you should have some already made sitting in your fridge if you took my advice from last week’s blog.

In a saucepan put a little bit of oil over high heat and give the oil a chance to get really hot. Then put a cup of the beans into hot oil and mash them like if they were mashed potatoes. After they’re completely mashed leave them on the stove for a bit and they’re ready to go. FUN FACT: If you don’t use all the beans you just cooked you can recook them over and over by adding more oil to the pan every time you use them. This is where they get the name “Refried Beans” They stay fresh in the fridge for up to two days and the more you cook them the better they taste!

Lets start on the Sauce!

What you need:

5 dried California Peppers (Chilies California)

Salt for taste

2 whole tomatoes

Before you start you need to boil the peppers and tomatoes in 2 cups of water. You can find these peppers at any market that carries Mexican goods. They’re cheap and can store in your pantry for a long time.

I’ve seen them at Whole Foods & Trader Joes so they’re not impossible to find.  Once your peppers and tomatoes have boiled take the peppers and the water they were boiled in and put them in the blender with a pinch of salt and blend until you see no more chucks. Sauce is now ready. Set it aside until ready to use.

For the filling you need:

4 Large peeled potatoes

1 packet of Gardein Chick’n Filets (or your favorite faux meat)

1 packet of Daiya Chedder Cheese (or your favorite vegan cheese)

Salt & Pepper for taste

In a pan that’s been lightly oiled place the 4 large potatoes after they have been roughly chopped and let them fully cook before adding the rest of the ingredients. Once cooked add the chopped Gardein Filets, Salt, Pepper and about half of the sauce. Let it cook on the stove for about 8 minutes stirring repeatedly.  Once that’s done take a handful of Daiya Cheese and put on top of the filling and do not stir.

When you’re ready to serve take a flour tortilla and warm it up on the stove then fill the inside with Daiya Cheese and top off with the potato and Gardein filling. The filling should look something like this..

Once you’re tortilla is filled fold it in half and place it back on the stove in a large pan so the outside of the tortilla gets brown and the cheese melts. Finished product will look like this…

Serve with a side of beans and enjoy! Beware once your friends try this meal they’ll be asking you to cook it at least once a week, When food is this delicious its ok to give into peer pressure.
